Where are my time entries stored?

Exclusively in your Odoo, directly on the account.analytic.line model – the same one Odoo’s own timesheets use. Clockoo is a client, not a platform: there is no Clockoo cloud. What you see in Clockoo is your Odoo, live.
Do I need an API key or admin rights?

No. You sign in via SSO – Azure AD or OAuth, exactly like in Odoo web. Your existing Odoo permissions apply.
What data does Clockoo receive?

As little as possible. The license server counts active users per instance, without names, e-mail addresses or time data. Your project and time data never leave your Odoo.
